Olive oil is a prime component of the Mediterranean Diet. Olive oil is named "the good fat" as it is composed of monounsaturated fats.
The beneficial health effects of olive oil are due to both its high content of monounsaturated fats and its high content of antioxidants. Studies have shown that olive oil offers protection against heart disease by controlling LDL (“bad”) cholesterol levels while raising HDL (the “good” cholesterol) levels.
High-quality olive oil acts as a strong antioxidant because it contains a large number of polyphenols. The higher the polyphenol value, then the stronger antioxidant an olive oil can be. By containing antioxidants high-quality olive oil is beneficial because it acts as a natural anti-inflammatory. Polyphenols are tested chemically in each olive oil after it is produced.
